Ingredients

Scale

Ingredients

  • 16 ounces Velveeta cheese, cut into cubes
  • 10 ounce can Rotel diced tomatoes and green chilies, undrained
  • 1 pound ground hamburger beef

Instructions

  1. Brown the Hamburger: In a large skillet over medium heat, cook the ground hamburger beef, breaking it apart with a spatula, until it is fully browned and no longer pink. Drain any excess fat if necessary.
  2. Add Velveeta and Rotel: Reduce the heat to low, then add the cubed Velveeta cheese and the entire can of Rotel (including juices) to the skillet with the cooked hamburger.
  3. Stir and Melt: Stir the mixture continuously until the Velveeta is completely melted and the ingredients are thoroughly combined into a smooth, creamy dip.
  4. Serve: Remove from heat and serve immediately with your choice of tortilla chips, crackers, or fresh vegetables for dipping.

Notes

  • For a spicier dip, use a hotter variety of Rotel or add some chopped jalapeños.
  • To make it vegetarian, omit the hamburger and use refried beans or cooked lentils.
  • You can keep the dip warm for serving by transferring it to a slow cooker set on low.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated gently on the stovetop or in the microwave.
