Ingredients

Scale

Dressing

  • 1 cup plus 2 Tbsp plain Greek yogurt
  • ½ cucumber, grated and squeezed to remove water
  • 2 to 3 garlic cloves, pressed
  • 2 Tbsp olive oil
  • 2 Tbsp chopped fresh dill
  • Salt and pepper, to taste

Salad

  • 2 cups chopped cooked chicken
  • 2 cups chopped romaine lettuce
  • 1 cup halved grape tomatoes
  • ½ cup sliced pepperoncini peppers
  • ½ cup sliced Kalamata olives
  • ¼ cup chopped red onion
  • ½ cup crumbled feta cheese

Instructions

  1. Prepare Cucumber: Grate the cucumber and then squeeze out the excess water using a clean kitchen towel or your hands to prevent the dressing from becoming watery.
  2. Make Tzatziki Dressing: In a bowl, combine the plain Greek yogurt, grated and squeezed cucumber, pressed garlic cloves, olive oil, and chopped fresh dill. Season generously with salt and pepper to taste and mix well until smooth and creamy.
  3. Assemble Salad: In a large mixing bowl, add the chopped cooked chicken, romaine lettuce, halved grape tomatoes, sliced pepperoncini peppers, sliced Kalamata olives, chopped red onion, and crumbled feta cheese. Pour the tzatziki dressing over the ingredients and gently toss everything together until evenly coated.

Notes

  • Use fresh dill for the best flavor in the dressing.
  • Squeezing the cucumber is essential to avoid excess water in the salad.
  • Leftover salad can be refrigerated for up to 2 days but is best enjoyed fresh.
  • For a spicier kick, add a pinch of red pepper flakes.
  • Serve chilled or at room temperature.
