Tiramisu Foam

  • 4 oz heavy cream (cold)
  • 4 oz milk (cold)
  • 2 Tbsp mascarpone (cold)
  • 1 Tbsp confectioners sugar
  • 1 teaspoon vanilla extract
  • pinch kosher salt
  • 1 Tbsp sweetened espresso mixture (from above, or more to taste)

Cold Brew Mixture

  • 1 Tbsp homemade dark chocolate syrup (or store-bought)
  • 6 oz cold brew coffee (homemade or store-bought)
  • Ice (enough to fill glass ¾ full)

Garnish

  • unsweetened cocoa powder (as needed for dusting)
  • ladyfinger cookie (to garnish)

Instructions

  1. Make Sweetened Espresso Mixture: Pour the freshly boiled hot water over the instant espresso powder and brown sugar. Stir well until the espresso powder and sugar have completely dissolved. Set this sweetened espresso mixture aside. Note that this makes more than needed; leftover mixture can be used for iced lattes.
  2. Prepare Tiramisu Foam: In a mixing bowl, whisk together the cold heavy cream, cold milk, cold mascarpone, confectioners sugar, vanilla extract, pinch of kosher salt, and 1 tablespoon of the sweetened espresso mixture. Whisk or beat until the mixture is smooth and nearly forms stiff peaks. Taste the foam and add more sweetened espresso mixture if desired. This quantity makes enough foam for about two servings.
  3. Assemble Tiramisu Cold Brew: In a serving glass, mix the dark chocolate syrup with the cold brew coffee until evenly combined. Fill the glass about ¾ full with ice cubes.
  4. Add Tiramisu Foam: Gently spoon the tiramisu foam mixture over the cold brew and ice, spreading it evenly so it reaches flush with the rim of the glass.
  5. Garnish and Serve: Generously dust the top of the foam with unsweetened cocoa powder. Place a ladyfinger cookie across the rim of the glass as an elegant garnish. Serve the drink with a straw, allowing the drinker to stir to blend the flavors or to enjoy the layers separately with each sip.
