These Taco Ranch Bites are a delicious and easy-to-make appetizer featuring seasoned ground beef, diced tomatoes with green chiles, creamy ranch dressing, and shredded cheddar cheese, all perfectly baked in crispy phyllo tart shells. Ideal for parties or quick snacks, they combine classic taco flavors with a creamy ranch twist for a crowd-pleasing bite.

Meat Mixture

  • 1 lb lean ground beef
  • 1 oz packet premium taco seasoning
  • 1 can (10 oz) diced tomatoes and green chiles, undrained

Cheese and Dressing

  • 2 cups shredded aged cheddar cheese
  • 8 oz bottle premium Ranch dressing

Tart Shells

  • 5 packs of 15-count frozen phyllo tart shells

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF to prepare for baking the tart shells.
  2. Cook Beef: In a skillet over medium heat, brown the ground beef thoroughly until it is no longer pink inside. Drain any excess fat to keep the mixture lean.
  3. Add Seasoning: Stir the taco seasoning packet into the cooked beef, then pour in the can of diced tomatoes and green chiles with their juices. Mix everything evenly and let it simmer for 5 minutes to blend the flavors before removing from heat.
  4. Prepare Mixture: In a separate bowl, combine the shredded cheddar cheese with the Ranch dressing until well mixed. Then fold this cheesy ranch mixture into the cooked taco meat until fully incorporated.
  5. Assemble Tarts: Spoon the cheese and taco meat mixture carefully into each frozen phyllo tart shell, filling to the top. If you want to save them for later, you can freeze the assembled tarts at this stage.
  6. Bake: Place the filled tarts on a baking sheet and bake in the preheated oven for 8-10 minutes. If baking from frozen, increase the baking time by 2-3 minutes to ensure the filling is heated through and the tart shells are crispy.

Notes

  • Use lean ground beef to reduce excess grease and make the bites healthier.
  • Shredded aged cheddar cheese adds richer flavor but any sharp cheddar works well.
  • Frozen phyllo tart shells do not need to be thawed before filling and baking.
  • To make ahead, assemble the tarts and freeze; bake directly from frozen adding extra bake time.
