Ingredients

Scale

For the Spinach Filling

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 cup fresh spinach, chopped (or frozen, thoroughly drained)

Cheese Mixture

  • ½ cup feta cheese, crumbled
  • ¼ cup cream cheese, softened
  • ¼ teaspoon dried oregano
  • Salt and pepper to taste

Pastry and Finishing

  • 1 sheet puff pastry (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Spinach Filling: Heat the olive oil in a pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the chopped spinach and cook until wilted and most moisture has evaporated, or if using frozen, until excess water has cooked off. Remove from heat and allow the mixture to cool completely.
  2. Mix the Cheese Blend: In a mixing bowl, combine the cooled cooked spinach, crumbled feta, softened cream cheese, dried oregano, and salt and pepper to taste. Stir vigorously until all ingredients are well incorporated into a smooth filling mixture.
  3. Assemble the Twists: On a lightly floured surface, unroll the puff pastry sheet. Spread the spinach and cheese mixture evenly over one half of the pastry sheet. Fold the other half of the sheet over the filling to cover it completely, forming a filled rectangle. Press gently along the edges to seal the filling inside the pastry.
  4. Cut and Twist: Using a sharp knife or pizza cutter, slice the folded pastry into 1-inch wide strips. Take each strip and hold both ends, then gently twist the strip several times to create the swirl shape. Lay the twisted strips neatly onto a parchment-lined baking sheet, spacing them adequately for even baking.
  5. Egg Wash and Bake: Brush each pastry twist with beaten egg to give them a shiny, golden finish once baked. Preheat your oven to 375°F (190°C) and bake the twists for 15 to 20 minutes, or until they are puffed up and golden brown. Remove from the oven and allow to cool slightly before serving.

Notes

  • Keep puff pastry cold while working to ensure the best rise and flakiness. If it softens too much, refrigerate for 10–15 minutes before continuing.
  • Make sure to squeeze out all moisture from the spinach to avoid soggy pastry bottoms.
  • Don’t overfill the pastry; a thin layer of filling prevents leakage and makes shaping easier.
  • Use a sharp knife or pizza cutter for clean, even strips that bake uniformly.
  • Egg wash adds a beautiful golden sheen and crisp exterior to the baked twists.
  • To store, refrigerate baked twists for up to 3 days or freeze unbaked twists and bake from frozen with added baking time.
  • Reheat in the oven at 350°F for 5–7 minutes to restore crispness; avoid microwaving as it makes pastry soggy.
