For the Burger Patties
- 1 lb ground beef (80/20 recommended)
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- Salt and black pepper, to taste
- 1 small onion, finely diced (optional)
For the Tacos
- 8 small flour tortillas (street taco size)
- 8 slices American cheese (or cheddar/pepper jack)
- 1 cup shredded lettuce
- 1 large tomato, diced
- 1/2 cup sliced pickles (or jalapeños)
- 1/2 cup burger sauce (mayo, ketchup, relish, hot sauce mix)
- 2 tbsp butter (for griddle)
- Cooking spray or oil
- Season Beef: In a mixing bowl, combine the ground beef with Worcestershire sauce, garlic powder, salt, and black pepper. Mix gently to combine, then divide and form into 8 loose balls without overworking the meat to keep patties tender.
- Preheat Griddle: Heat your Blackstone griddle to medium-high heat. Once hot, melt the butter evenly across the cooking surface. You may lightly coat the griddle with cooking spray or oil to prevent sticking.
- Smash Patties: Place the beef balls spaced evenly on the hot griddle surface. Immediately press down each ball firmly with a spatula to create thin, even patties. Optionally sprinkle finely diced onions on top for caramelizing.
- Add Tortillas: Quickly press one tortilla over each smashed patty covering it. Let cook for 2 to 3 minutes until the underside is golden and the patty begins to cook through.
- Flip and Add Cheese: Carefully flip each taco with the tortilla side down, then immediately place a slice of cheese over the cooked beef patty. Allow to cook an additional 1 minute to melt the cheese and crisp the tortilla on the other side.
