Ingredients

Scale

Potatoes

  • 3 medium Red Potatoes, diced
  • 1 tbsp Olive Oil (for tossing potatoes)
  • Salt and pepper, to season

Onions

  • 1 cup Onions, diced
  • 1 tbsp Olive Oil (for caramelizing)

Beef

  • 1 lb Lean Ground Beef
  • Salt and pepper, to taste

Sauce

  • 1/2 cup Mayonnaise
  • 2 tbsp Ketchup (low sugar preferred)
  • 1 tbsp Dijon Mustard
  • 1 tbsp Cajun Seasoning

Toppings

  • 1 cup Shredded Cheese (Colby Jack or Pepper Jack)
  • 1/2 cup Pickles, sliced
  • 1 cup Lettuce, chopped

Instructions

  1. Prep the Base: Dice the red potatoes into bite-sized pieces, then toss them with olive oil, salt, and pepper to evenly coat. Preheat your air fryer to 400°F (204°C) and cook the potatoes for 16-18 minutes until they are golden and crispy on the outside but soft inside.
  2. Caramelize Onions: While the potatoes cook, heat a tablespoon of olive oil in a skillet over medium heat. Add the diced onions and cook, stirring occasionally, for 10-15 minutes until they become golden brown and develop a sweet, rich flavor.
  3. Cook the Beef: Increase the heat to medium-high on the same skillet or another pan. Add the ground beef in small portions and smash it flat with a spatula. Cook for 5-7 minutes until browned and cooked through. Season with salt and pepper to taste.
  4. Make the Sauce: In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, and Cajun seasoning until the mixture is smooth and creamy. Adjust seasoning for your preferred taste and creaminess.
  5. Assemble the Bowls: Start by layering the crispy potatoes at the bottom of each bowl. Add the smashed beef evenly over the potatoes, followed by the caramelized onions and shredded cheese. Drizzle the prepared sauce over the top, then finish by adding fresh lettuce and pickles for crunch and freshness.

Notes

  • For a healthier option, use lean ground beef and low-sugar ketchup.
  • You can substitute red potatoes with brown rice if preferred.
  • Adjust the amount of Cajun seasoning in the sauce based on your spice tolerance.
  • Shredded cheese choice can be Colby Jack or pepper jack depending on your preference for mild or spicy.
  • Leftover components can be stored separately and assembled just before serving to maintain texture.
