4.7 from 77 reviews

This classic Rotel Dip is a warm, cheesy blend of seasoned ground beef, spicy Rotel tomatoes, and creamy Velveeta cheese. Perfect as a savory appetizer for parties, game days, or casual gatherings, it delivers a comforting combination of bold flavors and smooth texture that pairs wonderfully with tortilla chips.

Ingredients

Scale

Meat and Seasoning

  • 1 pound lean ground beef
  • 2 tablespoons homemade taco seasoning

Cheese and Tomatoes

  • 10 ounce can Rotel tomatoes (diced tomatoes with green chilies)
  • 16 ounce Velveeta cheese, processed and cubed

Instructions

  1. Cook the Ground Beef: In a medium-sized skillet over medium-high heat, add the ground beef. Cook and crumble the beef until it is no longer pink, stirring occasionally to break it up evenly. Once fully cooked, drain any excess grease to ensure the dip is not too oily.
  2. Add Seasoning and Mix-ins: To the cooked ground beef, add 2 tablespoons of homemade taco seasoning along with the entire can of Rotel tomatoes (including the juice) and the cubed Velveeta cheese.
  3. Melt and Combine: Stir the mixture continuously over medium heat until the Velveeta cheese is completely melted and all ingredients are well combined, creating a smooth and creamy cheesy dip.
  4. Serve: Once melted and uniform, pour the Rotel Dip into a serving dish. Serve immediately while warm, ideally with tortilla chips or your preferred dippers.

Notes

  • Homemade taco seasoning typically includes chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper.
  • For a spicier dip, you can add extra diced jalapeños or use hot Rotel tomatoes.
  • Velveeta cheese provides a smooth melting texture; avoid substituting with cheeses that don’t melt well for the best result.
  • If desired, keep the dip warm in a slow cooker on low setting during parties.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated gently.
