Green Sauce

  • 1/2 avocado
  • 1/2 cup mayo
  • 3-ounce chunk cotija cheese
  • 1 big handful cilantro stems and leaves (roughly 1/2 cup)
  • 1 clove garlic
  • Juice of 12 limes (about 2 tablespoons)
  • 2 tablespoons water (more as needed)

Instructions

  1. Season the Chicken: Trim excess fat from the chicken thighs if desired. Toss the chicken with soy sauce, avocado oil, and grated garlic to coat evenly. Sprinkle with the taco seasoning and mix well to ensure the spices cover all the chicken pieces.
  2. Cook the Chicken: Place the seasoned chicken thighs in the air fryer basket in a single layer. Air fry at 400°F (204°C) for 10-12 minutes until the chicken is crusty on the outside, golden brown, juicy, and cooked through.
  3. Make the Sauce: While the chicken cooks, combine avocado, mayo, cotija cheese, cilantro, garlic, lime juice, and 2 tablespoons water in a small food processor or blender. Blend until smooth. Adjust consistency by adding more water if too thick or more avocado/mayo if too thin.
  4. Chop the Chicken: Once cooked, let the chicken rest for a few minutes. Then roughly chop or pull the chicken into bite-sized pieces. Squeeze additional lime juice over the chopped chicken for brightness.
  5. Assemble the Tacos: Warm the tortillas. Spread a dollop of the green sauce onto each tortilla, add a generous pile of the chopped chicken, and top with fresh cilantro and diced onion. Add more sauce if desired, then serve immediately and enjoy.
