Ingredients

Scale

Red Velvet Cake

  • 1 box red velvet cake mix
  • Ingredients required on the cake mix box (usually eggs, oil, and water)

Cream Cheese Mixture

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Additional Ingredients

  • 1 cup semi-sweet chocolate chips

Instructions

  1. Prepare the Cream Cheese Mixture: In a medium bowl, beat the softened cream cheese until smooth. Add sugar, egg, and vanilla extract and continue beating until fully combined and creamy. Set aside.
  2. Prepare the Red Velvet Cake Batter: In a large bowl, prepare the red velvet cake batter according to the package instructions, typically combining the cake mix with eggs, oil, and water.
  3. Layer the Ingredients: Pour half of the red velvet cake batter into a greased 9×13-inch baking pan, spreading evenly. Spoon dollops of the cream cheese mixture on top and sprinkle half of the chocolate chips over it. Carefully pour the remaining red velvet batter over the cream cheese and chocolate layers. Finally, sprinkle the remaining chocolate chips on top.
  4. Bake the Cake: Preheat your oven to 350°F (175°C). Bake the cake for approximately 45 to 50 minutes, or until the top is cracked and the cake appears gooey and set in the center. Use a toothpick inserted into the cake via the cream cheese layer to check doneness; it should come out with moist crumbs but not wet batter.
  5. Cool and Serve: Allow the cake to cool in the pan for at least 20 minutes before slicing. This cake is best enjoyed slightly warm to appreciate the gooey texture.

Notes

  • Ensure the cream cheese is well softened to avoid lumps in the mixture.
  • Do not overbake to maintain the gooey texture characteristic of an Earthquake Cake.
  • You can substitute semi-sweet chocolate chips with white chocolate or chunks for variation.
  • Use a non-stick spray or butter and flour to grease the pan effectively.
  • Leftover cake can be stored in an airtight container in the refrigerator for up to 3 days.
