Base

  • 4 large slices of sourdough bread (£1.15)
  • 1 tbsp extra virgin olive oil
  • 2 cloves of garlic
  • Salt & Pepper, to taste

  • 2 beef tomatoes (£1.10)
  • 250 ml passata (£0.45)
  • 250 g (2 balls) mozzarella, cut into thin slices (£1.20)
  • 50 g parmesan cheese (£0.87)
  • 1 bunch fresh basil, leaves removed from stems (£0.55)

Instructions

  1. Prepare the bread: Heat a frying pan over medium heat and drizzle a little olive oil. Add two slices of sourdough bread to the pan, garlic side up. Rub the cut side of a garlic clove on the exposed surface of each slice to infuse the bread with garlic flavor.
  2. Fry the bread: Fry the sourdough slices for around 2 minutes on each side or until they turn golden brown. Remove from the pan and place on a baking tray. Repeat in batches for all four slices.
  3. Assemble toppings: Pat the mozzarella slices dry with a paper towel to remove excess moisture. Place mozzarella evenly over each toast slice, followed by a layer of fresh basil leaves and sliced beef tomatoes. Drizzle extra virgin olive oil over the top and season with salt.
  4. Bake initial toppings: Preheat the oven (temperature not specified, estimated at 180°C/350°F). Place the baking tray with the toasts in the oven for 15 minutes to melt the cheese and soften the tomatoes.
  5. Add final toppings: Remove the tray from the oven and spread about 2 tablespoons of passata over each toast. Sprinkle grated parmesan cheese and a pinch of dried oregano on top. Return to the oven for another 5 minutes to allow the cheese to melt and the flavors to meld.
