Ingredients

Scale

For the Soup Base

  • 1 lb Ground Beef (80/20 or 85/15 for optimal taste)
  • 2 cloves Garlic, minced, fresh
  • 1 medium Yellow Onion, finely diced
  • 28 oz Crushed Tomatoes
  • 4 cups Chicken Broth
  • 2 tbsp Tomato Paste
  • 1 tbsp Kosher Salt
  • 1 tsp Black Pepper

For Seasoning

  • 2 tsp Dried Basil
  • 1 tsp Dried Oregano
  • 1 tsp Garlic Powder (optional)
  • 1 tsp Onion Powder (optional)

For the Noodles and Greens

  • 8 oz Lasagna Noodles, broken into pieces
  • 1 cup Frozen Chopped Spinach

For Creaminess and Topping

  • 1 cup Heavy Cream
  • 1 cup Ricotta Cheese
  • 1 cup Mozzarella Cheese
  • 1/4 cup Parmesan Cheese (optional)

Instructions

  1. Brown the Beef: In a large pot over medium-high heat, add the ground beef and cook until browned, breaking it into small pieces as it cooks. Drain any excess grease to avoid a greasy soup.
  2. Sauté Aromatics and Seasonings: Add the minced garlic, diced onion, dried basil, oregano, garlic powder, onion powder, kosher salt, and black pepper to the pot. Sauté for about 5 minutes until the onions soften and the spices release their aromas.
  3. Add Tomato Base: Stir in the crushed tomatoes, chicken broth, and tomato paste. Mix well to combine all ingredients forming the rich soup base.
  4. Cook the Noodles: Break the lasagna noodles into approximately 2-inch pieces and add them to the pot. Bring the soup to a boil, then reduce heat and let it simmer for 10 minutes until the noodles are tender but not mushy.
  5. Incorporate Greens and Cream: Stir in the frozen chopped spinach and heavy cream. Continue to cook uncovered for 5 more minutes until the spinach is heated through and the soup is creamy.
  6. Serve with Cheese Toppings: Ladle the soup into bowls, sprinkle each serving with mozzarella cheese, dollop ricotta cheese, and optionally grate parmesan cheese on top. Serve immediately for best flavor and texture.

Notes

  • You can add extra greens like kale or swap ground beef for Italian sausage for variety.
  • Stir in the heavy cream at the end to prevent curdling and keep the soup smooth.
  • This soup reheats well and can be made ahead for easy weeknight meals.
  • Adjust salt and pepper based on your taste preferences and broth saltiness.
