Cookie Dough
- 1 cup peanut butter
- 3 Tbsp. butter, softened
- 1 and ¼ cups powdered sugar
- 1 cup honey nut granola, with big clumps broken up
Filling
- ¼ cup raspberry jam (or other red jam of your choice)
- Cream peanut butter and butter: In a stand mixer fitted with a paddle attachment, beat together the peanut butter and softened butter until the mixture is light and creamy.
- Combine powdered sugar and granola: Gradually stir in the powdered sugar and broken-up granola until the mixture forms a soft dough, ensuring all ingredients are well incorporated.
- Shape cookies: Roll the dough into 24 evenly sized balls and arrange them in a single layer on a parchment-lined tray. Using your thumb or the back of a greased spoon, press into the center of each ball to create a small indentation.
- Fill with jam: Spoon a small amount of raspberry jam into each indentation, filling the thumbprint well without overflowing.
- Chill to set: Place the tray in the refrigerator and chill the cookies for at least 1 hour or until firm to the touch.
- Store: Keep the cookies stored in the refrigerator to maintain freshness and firmness until ready to serve.
Notes
- You can substitute raspberry jam with other red or fruit jams such as strawberry or cherry for varied flavors.
- Ensure the granola is broken into chunks to provide texture but is not too fine for best results.
- If you don’t have a stand mixer, you can mix the peanut butter and butter by hand with a sturdy spoon or electric hand mixer.
- Keep cookies refrigerated, especially in warmer climates, to prevent the butter and peanut butter from softening too much.
