Instructions

  1. Preheat and Prepare Dish: Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish or line it with parchment paper to prevent sticking.
  2. Mix the Meatloaf: In a large bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and black pepper. Mix gently just until combined to keep the meatloaf tender.
  3. Press Meat Into Dish: Spread the meat mixture evenly in the bottom of the prepared baking dish. Bake uncovered for 20–25 minutes to set the meatloaf base.
  4. Prepare Mashed Potatoes: Warm the mashed potatoes if cold, then stir in the sour cream and butter until creamy. Season with salt and pepper to taste.
  5. Layer Mashed Potatoes: Carefully spread the prepared mashed potatoes over the baked meatloaf layer, ensuring an even layer for consistent texture.
  6. Add Cheese and Final Bake: Sprinkle shredded cheddar cheese evenly on top of the mashed potato layer. Return to the oven and bake a further 10–15 minutes until the cheese is melted, bubbly, and slightly golden.
