5.3 from 24 reviews

Nobu’s Miso-Marinated Black Cod is a luxurious, umami-rich dish that features tender, flaky black cod fillets marinated in a sweet and savory miso marinade. This iconic recipe balances the rich buttery texture of black cod with a perfectly harmonious blend of white miso, mirin, rice vinegar, sugar, soy sauce, and sake, then broiled to caramelized perfection. Ideal for an elegant dinner or a special occasion, it delivers melt-in-your-mouth delicate flavors with minimal effort.

Ingredients

Scale

For the Miso Marinade

  • ¼ cup white miso paste
  • ¼ cup mirin
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon soy sauce
  • 2 tablespoons sake (optional, can be substituted with water)

For the Black Cod

  • 4 black cod fillets (about 6 oz each), skin-on
  • Fresh lemon wedges (optional, for serving)
  • Chopped green onions (optional, for garnish)

Instructions

  1. Mix Marinade Ingredients: In a small bowl, whisk together the white miso paste, mirin, rice vinegar, sugar, soy sauce, and sake (if using). Stir well until the sugar completely dissolves and the marinade is smooth and well combined.
  2. Coat the Fish: Place the black cod fillets in a shallow dish or resealable plastic bag. Pour the prepared miso marinade evenly over the fillets, making sure each piece is fully coated with the flavorful marinade.
  3. Marinate: Cover the dish or seal the bag and refrigerate for at least 30 minutes, preferably up to 1 hour to deepen the flavors.
  4. Preheat Broiler: When ready to cook, preheat your broiler on high heat and position the oven rack about 6 inches from the heat source.
  5. Broil the Fish: Place the marinated black cod fillets on a baking sheet lined with parchment paper or foil. Broil the fish for 10 to 12 minutes, or until the top is golden brown and the fillets flake easily with a fork. If needed, broil for an additional 1-2 minutes for extra caramelization, keeping a close watch to prevent burning.
  6. Serve and Garnish: Transfer the broiled black cod to serving plates. Optionally, garnish with fresh lemon wedges and chopped green onions to add brightness and a subtle fresh flavor.

Notes

  • Do not overcook the cod as it can dry out; aim for moist, tender fillets that flake easily.
  • Marinate for up to 1 hour for more intense umami flavor.
  • If black cod isn’t available, substitute with sablefish, halibut, or sea bass.
  • You can grill the marinated fish for a smoky variation instead of broiling.
  • The miso marinade is versatile and can be used for shrimp, chicken, tofu, or vegetables.
  • Leftover cooked cod can be stored in an airtight container in the refrigerator for up to 2 days.
  • Freeze marinated fish separately from the marinade for up to 3 months for best texture preservation.
