Ingredients

Scale

Main Ingredients

  • 1 package (8.5 oz) cornbread mix
  • 1 cup sour cream
  • 1 can (15 oz) cream-style corn
  • 1 can (4 oz) green chilies, drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped cooked bacon
  • 1/2 cup diced green onions
  • 2 eggs
  • 1/4 cup melted butter
  • Salt and pepper, to taste

Optional Heat Addition

  • Swap green chilies for diced jalapeños or pepper jack cheese for more heat

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) to ensure it’s piping hot when the casserole goes in.
  2. Mix the Casserole: In a large mixing bowl, combine the cornbread mix, sour cream, cream-style corn, green chilies, half of the shredded cheddar cheese, chopped cooked bacon, diced green onions, eggs, and melted butter. Season the mixture with salt and pepper to taste. Mix thoroughly until all ingredients are well incorporated. This one-bowl step simplifies preparation and cleanup.
  3. Transfer to Baking Dish: Grease a 9×9-inch square skillet or baking dish. Pour the cornbread mixture into the dish and smooth it out evenly with a spatula to ensure uniform baking.
  4. Top with Cheese: Sprinkle the remaining shredded cheddar cheese evenly over the top of the mixture. This will create a golden, gooey crust when baked.
  5. Bake: Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the casserole is set in the center and the top turns golden brown. Test doneness by inserting a toothpick into the center; it should come out clean or with just a few moist crumbs.
  6. Rest & Serve: Allow the casserole to cool for a few minutes after removing it from the oven, so it sets properly and is easier to slice. Serve warm for the best flavor and texture.
