Yogurt Mixture
- 2 cups plain yogurt
- 1 ripe banana, mashed
- 2 tbsp honey (optional)
Toppings
- 2 tbsp natural style peanut butter
- 2 tbsp mini chocolate chips
- 1 ripe banana, sliced
- Prepare the baking sheet: Line a baking sheet with parchment paper. Depending on how thick you want your bark, you can use a 9×9 baking dish, 9×13 baking dish, or a 13×18 baking sheet.
- Mix yogurt base: In a medium bowl, mash one ripe banana until smooth. Add in the plain yogurt and honey if using. Stir well until all ingredients are fully combined.
- Spread mixture: Pour the prepared yogurt mixture onto the lined baking sheet. Use a knife or spatula to spread it evenly and create a smooth layer.
- Add toppings: Swirl the natural style peanut butter over the yogurt layer. If peanut butter is too thick, warm it in the microwave in 20-second intervals to make it easier to spread. Sprinkle mini chocolate chips evenly over the top. Finally, arrange the sliced banana evenly on top of the yogurt.
- Freeze: Place the baking sheet in the freezer and freeze for at least 5 hours, or until the yogurt bark is completely firm and frozen.
- Serve: Remove from the freezer and break the frozen yogurt bark into chunks by hand. Serve immediately and enjoy this refreshing treat.
Notes
- You can substitute plain yogurt with Greek yogurt for a thicker texture and higher protein content.
- Honey is optional and can be omitted for less sweetness or replaced with maple syrup or agave nectar.
- Store leftover yogurt bark in an airtight container in the freezer for up to 2 weeks.
- Feel free to add other toppings such as chopped nuts, dried fruit, or shredded coconut.
- If peanut butter is too thick to swirl easily, gently warm it in the microwave to soften without making it too runny.
