Instructions

  1. Prepare Meatball Mixture: In a small bowl, combine ground turkey, crumbled bread, slightly beaten egg, minced onion, garlic powder, Italian seasoning, and 1 teaspoon chicken-flavored bouillon. Mix thoroughly until all ingredients are well incorporated.
  2. Form Meatballs: Shape the mixture into small meatballs about ½ inch in diameter, ensuring they are uniform in size for even cooking.
  3. Boil Broth: In a large pot, bring 6 cups of cold water and the remaining 1 tablespoon of chicken-flavored bouillon to a rolling boil over medium-high heat. For enhanced flavor, optionally add a Parmesan rind to the broth at this stage.
  4. Cook Meatballs and Pasta: Carefully add the formed meatballs and ½ cup of orzo pasta to the boiling broth. Cook for 10 minutes, stirring occasionally to prevent pasta from sticking and to ensure meatballs cook through.
  5. Add Spinach and Simmer: Stir in 1½ cups of coarsely chopped fresh spinach leaves and reduce heat to low. Simmer the soup gently for an additional 3 minutes until the spinach wilts and flavors meld.
