Instructions

  1. Separate Eggs: Crack the eggs carefully, separating the whites and yolks into two clean bowls to ensure proper whipping and mixing later.
  2. Whisk Yolks: Combine the egg yolks with sugar and whisk on medium speed for 3-5 minutes until the mixture becomes thick and frothy, which helps in achieving a creamy texture.
  3. Mix Mascarpone: Gently fold the mascarpone cheese into the yolk and sugar mixture until fully blended and smooth, being careful not to deflate the mixture.
  4. Whip Egg Whites: Using a clean bowl, beat the egg whites until stiff peaks form, which will lighten the mascarpone filling.
  5. Fold Mixtures: Incorporate one quarter of the whipped egg whites into the mascarpone mixture to loosen it, then carefully fold in the remaining egg whites to maintain airiness.
  6. Prepare Coffee Dip: Pour brewed espresso or instant coffee into a shallow plate. Quickly dip each ladyfinger for 1-2 seconds, ensuring they absorb the coffee without becoming soggy.
  7. Layer: Arrange half of the soaked ladyfingers in the bottom of a serving dish. Spread half of the mascarpone filling evenly over the ladyfingers. Repeat with the remaining ladyfingers and mascarpone filling for a second layer.
