Instructions

  1. Cook the Eggs: Place the eggs in a saucepan and cover with cold water. Bring to a boil, then turn off the heat, cover, and let the eggs sit for 10–12 minutes. Drain, cool under cold water, peel, and chop the eggs.
  2. Mix the Base: In a medium mixing bowl, combine mayonnaise, Dijon mustard, hot sauce (if using), paprika, garlic powder, onion powder, salt, and black pepper. Stir in the chopped eggs until well coated.
  3. Add Cheese & Bacon: Mix in the shredded cheddar cheese and half of the crumbled cooked bacon to the egg mixture, stirring until evenly distributed.
  4. Bake: Preheat the oven to 350°F (175°C). Grease a baking dish, then spread the dip mixture evenly into the dish. Bake uncovered for 15–20 minutes, or until the dip is hot and bubbly.
  5. Garnish & Serve: Remove the dip from the oven and sprinkle the remaining bacon, chopped green onions, and a pinch of paprika on top. Serve warm with crackers, chips, or toasted bread slices.

Notes

  • This dip can be assembled ahead of time and refrigerated covered for up to 24 hours; just add 5 extra minutes to baking time.
