  • 8 oz. ground white meat turkey
  • 1 (14 oz.) can petite diced tomatoes in juice
  • 1/4 cup Cheddar cheese, grated, reduced fat (optional)

Instructions

  1. Prepare the Sweet Potatoes: Preheat your oven to 400°F. Pierce the sweet potatoes several times with a fork all over. Place them on a baking sheet lined with aluminum foil and bake for about 45 minutes until they are soft and easily pierced with a fork.
  2. Cook the Vegetables: While the potatoes bake, heat the olive oil in a deep skillet over medium heat. Add the diced onion and red bell pepper and sauté, stirring occasionally, until tender, about 5 minutes.
  3. Spice and Add Turkey: Stir in the minced garlic, ground cumin, dried oregano, and salt. Add the ground white meat turkey, breaking it apart with a spoon, and cook until the turkey is no longer pink, approximately 3 to 5 minutes.
  4. Simmer the Chili: Stir in the diced tomatoes with their juice, reduce the heat to medium-low, and cover the skillet. Let the chili simmer for 20 minutes, stirring occasionally.
  5. Finish the Filling: Remove the skillet from heat and gently stir in the diced avocado to add creaminess and nutrition.
  6. Assemble the Stuffed Potatoes: Slice the baked sweet potatoes lengthwise just until they open up. Spoon the turkey chili mixture evenly into each sweet potato.
