- 8 oz. ground white meat turkey

- Prepare the Sweet Potatoes: Preheat your oven to 400°F. Pierce the sweet potatoes several times with a fork all over. Place them on a baking sheet lined with aluminum foil and bake for about 45 minutes until they are soft and easily pierced with a fork.
- Cook the Vegetables: While the potatoes bake, heat the olive oil in a deep skillet over medium heat. Add the diced onion and red bell pepper and sauté, stirring occasionally, until tender, about 5 minutes.
- Spice and Add Turkey: Stir in the minced garlic, ground cumin, dried oregano, and salt. Add the ground white meat turkey, breaking it apart with a spoon, and cook until the turkey is no longer pink, approximately 3 to 5 minutes.
