Sweet Potatoes

Turkey Chili Mixture

  • 3/4 tsp. ground cumin
  • 1/2 tsp. dried oregano
  • 1/4 tsp. salt
  • 8 oz. ground white meat turkey
  • 1 (14 oz.) can petite diced tomatoes in juice

Avocado & Topping

  • 1 ripe, fresh avocado, halved, pitted, peeled and diced
  • 1/4 cup Cheddar cheese, grated, reduced fat (optional)

Instructions

  1. Preheat and bake sweet potatoes: Heat oven to 400 degrees F. Using a fork, pierce the sweet potatoes several times all over. Place them on a baking sheet lined with aluminum foil and bake for about 45 minutes, or until soft and fork-tender.
  2. Prepare the turkey chili base: While the potatoes bake, heat olive oil in a deep skillet over medium heat. Add diced onion and red bell pepper; cook, stirring occasionally, until tender, about 5 minutes. Stir in minced garlic, ground cumin, dried oregano, and salt.
  3. Cook the ground turkey: Add the ground white meat turkey to the skillet. Break it up with a spoon and cook until no longer pink, approximately 3 to 5 minutes. Then stir in the petite diced tomatoes with juice.
  4. Simmer the chili mixture: Reduce heat to medium-low, cover the skillet, and let the turkey chili cook for 20 minutes to blend flavors.
  5. Combine avocado with chili and assemble: Remove the skillet from heat and gently stir in the diced avocado. Slice each baked sweet potato lengthwise just enough to open them. Fill the cavities of the sweet potatoes evenly with the turkey chili mixture.
  6. Add optional cheese topping: If desired, sprinkle reduced-fat Cheddar cheese over the stuffed sweet potatoes as a finishing touch before serving.
