Ingredients

Scale

Beef Mixture

  • 1 pound lean ground beef
  • 1/2 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper to taste
  • 1/3 cup thinly sliced green onions
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon sriracha (optional)

Vegetables & Sauce

  • 1 tablespoon avocado oil
  • 1 pound shredded Brussels sprouts
  • Kosher salt and freshly ground black pepper to taste
  • 1/2 cup sweet chili sauce
  • Juice of 1/2 lime
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook the Ground Beef: Add the ground beef to a large skillet and crumble it over medium-high heat. Mix in green onions, and season with salt, pepper, garlic powder, sriracha (if using), and soy sauce. Cook until the beef is fully browned and cooked through, then transfer to a plate and set aside.
  2. Sauté Brussels Sprouts: In the same skillet, add a tablespoon of avocado oil. Toss in the shredded Brussels sprouts, seasoning with salt and pepper. Sauté the sprouts over medium heat until they’re tender and caramelized, about 8-10 minutes.
  3. Combine Beef and Sauce: Return the cooked ground beef to the skillet with the Brussels sprouts. Pour in the sweet chili sauce and lime juice. Stir well to coat everything evenly and allow the flavors to meld for 2-3 minutes over medium heat.
  4. Garnish and Serve: Remove from heat and sprinkle with sesame seeds if desired. Serve hot over steamed rice or your preferred side for a complete meal.

Notes

  • For a spicier kick, increase the sriracha or add red pepper flakes.
  • This recipe is great for meal prep and reheats well in a skillet or microwave.
  • You can substitute shredded cabbage or kale if Brussels sprouts are not available.
  • Serving over rice, quinoa, or noodles makes it a hearty and filling dish.
  • To keep it low sodium, adjust soy sauce and sweet chili sauce quantities accordingly.
