Ingredients
- 1 pound (20-25 or 16–20) shrimp, peeled and deveined
- 1/2 cup jerk marinade
- 2 slices pineapple, cut into 1/2 inch pieces
- Marinate the shrimp: Place the peeled and deveined shrimp in a bowl and cover them with half of the jerk marinade. Ensure all shrimp are coated well. Allow the shrimp to marinate for at least 20 minutes or up to overnight in the refrigerator to absorb the bold, spicy flavors.
- Prepare the skewers: Alternate threading the marinated shrimp and the pineapple pieces onto skewers, creating a colorful and balanced combination of flavors on each skewer.
- Grill the skewers: Preheat your grill to medium-high heat. Place the shrimp and pineapple skewers on the grill, cooking them for about 2-3 minutes per side. Grill until the shrimp turns opaque and slightly charred, and the pineapple is caramelized and tender.
- Serve: Remove the skewers from the grill and serve immediately, optionally with the remaining jerk marinade on the side for dipping or drizzling.
Notes
- For best results, soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Use fresh shrimp if possible for a more flavorful and tender bite.
- You can adjust the jerk marinade quantity and marinating time depending on your spice preference.
- If you don’t have a grill, these skewers can also be cooked under a broiler or on a grill pan stove-top.
