Instructions

  1. Prepare the courgette: Slice the courgettes lengthwise about 1/4 inch thick for even grilling. Brush lightly with olive oil to prevent sticking on the grill and add a pinch of salt.
  2. Grill the courgette: Preheat a grill or grill pan over medium-high heat. Place the courgette slices and halloumi cheese on the grill. Cook the courgettes for about 2-3 minutes on each side until tender and marked with grill lines.
  3. Grill the halloumi: Grill the halloumi slices for about 1-2 minutes on each side or until golden brown and slightly softened but still holding their shape.
  4. Assemble the salad: Arrange the grilled courgette and halloumi on a platter. Sprinkle the capers evenly over the top.
  5. Make the dressing and dress: In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper. Drizzle the dressing evenly over the salad just before serving to maintain freshness.
