Instructions

  1. Preheat and prepare ingredients: Preheat your oven to 350°F (175°C). Finely chop the fresh spinach, dice the sweet onion, mince the garlic, and grate the parmesan cheese. Set aside the grated parmesan for later use.
  2. Sauté the aromatics and spinach: Heat olive oil in a large skillet over medium heat. Add the diced onions and sauté for 3-5 minutes until they become translucent. Stir in the minced garlic and chopped spinach, cooking for an additional 3-5 minutes until the spinach wilts down.
  3. Mix the yogurt and cheese base: In a separate bowl, combine the plain Greek yogurt, reduced-fat mayonnaise, 1/4 cup of the grated parmesan, 1/2 cup of shredded mozzarella, salt, black pepper, and red pepper flakes if using. Stir until well combined.
  4. Combine and heat the dip mixture: Add the Greek yogurt mixture to the skillet with the sautéed spinach and onions. Stir everything together and cook for 1-2 minutes to blend the flavors and warm the mixture.
