Chicken
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
Rice
- 1 cup long grain white rice
- 2 cups water
Flavorings
- 1 tablespoon fresh ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt, to taste
- Black pepper, to taste
- Prepare the rice: Rinse the long grain rice under cold water until the water runs clear. In a medium saucepan, bring 2 cups of water to a boil, add the rice, cover, and reduce heat to low. Cook for 15 minutes or until the water is absorbed and rice is tender. Remove from heat and keep covered.
- Cook the chicken: Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add the bite-sized chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
- Add ginger and soy sauce: Stir in the minced fresh ginger and 2 tablespoons of soy sauce to the chicken. Cook for an additional 2 minutes, allowing the flavors to meld and the sauce to coat the chicken evenly.
- Serve: Spoon the cooked rice onto plates and top with the ginger chicken. Serve immediately while hot.
Notes
- For extra flavor, garnish with chopped green onions or sesame seeds.
- You can substitute chicken thighs with chicken breast if preferred.
- Adjust the amount of soy sauce to your taste or opt for low sodium soy sauce for a healthier option.
- Adding a splash of rice vinegar or a pinch of sugar can balance the dish’s flavors if desired.
