Ingredients

Scale

Puff Pastry and Cheese Filling

  • 1 sheet puff pastry (about 8×8 inches), thawed
  • 4 ounces goat cheese, softened
  • 1 teaspoon lemon zest (optional)
  • 1 teaspoon fresh thyme leaves (or rosemary), divided

Vegetables

  • 810 asparagus stalks, trimmed and cut into 2-inch pieces
  • 1 cup sugar snap peas, trimmed
  • 45 medium radishes, thinly sliced
  • 1 small shallot, finely chopped
  • 1 clove garlic, minced (optional)

Others

  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for roasting and baking the tart.
  2. Roast Vegetables: Toss the asparagus pieces, sugar snap peas, and thinly sliced radishes with olive oil, minced garlic (if using), salt, pepper, and half the fresh thyme leaves. Spread them evenly on the prepared baking sheet and roast in the oven for 8-10 minutes until vegetables are just tender but still vibrant in color.
  3. Prepare Puff Pastry: On a lightly floured surface, gently roll the thawed puff pastry sheet to smooth any folds and slightly enlarge it to about a 10×10 inch square. Transfer the pastry onto the parchment-lined baking sheet used for roasting the vegetables.
  4. Score Pastry Border: Using a sharp knife, score a 1-inch border around the edges of the puff pastry, being careful not to cut through completely. This will allow the crust to puff up around the edges.
  5. Mix Cheese Filling: In a small bowl, combine the softened goat cheese with lemon zest (if using) and the remaining half of fresh thyme leaves. Spread this mixture evenly within the scored border on the puff pastry.
  6. Arrange Vegetables: Distribute the roasted vegetables evenly over the goat cheese layer, leaving some space so the crust can puff up nicely during baking.
  7. Apply Egg Wash: Brush the exposed edges of the puff pastry with the beaten egg to achieve a beautiful golden brown finish when baked.
  8. Bake the Tart: Place the baking sheet in the preheated oven and bake the tart for 20-25 minutes, or until the crust is puffed and golden brown.
  9. Cool and Serve: Remove the tart from the oven and allow it to cool slightly on a wire rack before slicing. This resting time helps the cheese set and keeps the tart intact for serving.

Notes

  • Use fresh vegetables that are vibrant and crisp for the best texture and flavor.
  • Feel free to substitute fresh thyme with rosemary for a slightly different herbal note.
  • You can omit garlic if you prefer a milder flavor or if serving to people sensitive to garlic.
  • If lemon zest is not available, the tart will still have great flavor without it.
  • Letting the tart cool slightly allows easier slicing and prevents the goat cheese from spilling out.
  • Serve warm or at room temperature for best taste and texture.
