Instructions

  1. Roast Beets: Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and bake for 40-45 minutes until fork-tender. Remove from oven, let cool, then peel the beets and dice into small pieces.
  2. Combine Salad Ingredients: In a large mixing bowl, add the chickpeas, diced beets, thinly sliced red onion, chopped parsley, chopped fresh mint (if using), and crumbled feta. Toss gently to mix while keeping the beet pieces intact.
  3. Prepare Dressing: In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, honey or maple syrup, salt, and black pepper until the dressing is well emulsified.
  4. Toss Salad with Dressing: Pour the dressing over the salad ingredients and toss gently again to evenly coat everything with the dressing.
  5. Rest and Serve: Let the salad sit for 10-15 minutes to allow the flavors to meld together. Serve chilled or at room temperature. Optionally, top with extra fresh herbs or toasted nuts for added texture and flavor.
