This Cheddar Sweet Corn Pie is a comforting, savory dish that combines fresh or thawed corn kernels with sautéed onions, garlic, and sharp cheddar cheese baked into a creamy custard, optionally nestled in a flaky pie crust. Perfect as a side or a main for lunch or dinner, this pie offers sweet corn flavor enhanced by cheese and subtly spiced with salt and pepper.

Ingredients

Scale

Main Ingredients

  • 2 tablespoons Butter, plus extra for greasing the dish
  • 1 cup Yellow Onion, finely chopped
  • 1 medium Garlic Clove, minced
  • 4 cups Corn Kernels, fresh or thawed (from about 6 large ears)
  • 1 cup Shredded Cheddar Cheese
  • 3 large Eggs
  • 1 cup Milk
  • Salt and Pepper to taste

Optional

  • 1 pie crust (Optional Pie Crust)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish with butter. If using a pie crust, gently fit it into the dish and trim the edges for a neat fit.
  2. Sauté Aromatics: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the finely chopped onion and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant.
  3. Add Corn: Add the corn kernels to the skillet. Sauté for 2-3 minutes until the corn is warmed through and any excess moisture has evaporated. Remove the skillet from heat and allow the mixture to cool slightly.
  4. Make Custard Mixture: In a large bowl, whisk together the eggs, milk, salt, and pepper until smooth and well combined.
  5. Combine Filling: Stir the sautéed onions, garlic, corn mixture, and shredded cheddar cheese into the custard mixture gently until fully mixed.
  6. Fill Pie Dish: Pour the filling into your prepared pie dish, over the pie crust if using one.
  7. Bake: Place the pie in the preheated oven and bake for 35-40 minutes, or until the center is just set and the top is lightly golden. A knife inserted near the center should come out clean.
  8. Cool and Serve: Remove the pie from the oven and let it cool for at least 10 minutes before slicing to allow it to set and hold its shape for creamy slices.

Notes

  • For deeper flavor, try using a blend of sharp and mild cheddar cheeses.
  • Sprinkling Parmesan cheese on top before baking adds a nice crusty, savory layer.
  • Fresh corn is ideal, but frozen or well-drained canned corn can be used as alternatives.
  • This pie can be served warm or at room temperature and pairs well with salads or roasted vegetables.
