  • 1 recipe homemade marinara sauce or 24 ounces marinara sauce
  • 7 cups low sodium chicken broth or vegetable broth

  • 9 lasagna noodles, broken into pieces
  • 10 ounces ricotta cheese or cottage cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup freshly grated parmesan cheese
  • Fresh basil for serving

Instructions

  1. Brown the meat: In a large pot over medium-high heat, cook the ground beef and Italian sausage until browned. Season with salt and freshly ground black pepper as you cook. Drain excess grease and remove the cooked meat from the pot, setting it aside.
  2. Sauté aromatics: In the same large pot, heat olive oil over medium heat. Add the chopped yellow onion and sauté for about 5 minutes, stirring occasionally until softened. Add minced garlic and cook for another minute or two until fragrant.
  3. Add tomato paste and sauces: Stir in the tomato paste, marinara sauce, red pepper flakes, parsley, oregano, and basil along with the broth. Return the cooked meat to the pot and stir to combine everything evenly.
  4. Cook noodles: Bring the soup to a boil, then add the broken lasagna noodles. Reduce heat to medium-low and simmer, stirring occasionally, until the noodles are tender, about 10-12 minutes. If using, add fresh spinach leaves at this stage and stir in until wilted.
  5. Prepare cheese topping: In a small bowl, combine mozzarella, Parmesan, and ricotta cheeses until well mixed.
  6. Serve: Ladle the hot soup into bowls and top each with a generous dollop of the cheese mixture. Garnish with fresh basil leaves and serve warm.
