Ingredients

Scale

Meats

  • 0.5 pound lean ground beef
  • 0.5 pound ground Italian sausage
  • Salt to taste
  • Freshly ground black pepper to taste

Vegetables

  • 1 yellow onion, chopped
  • 1 Tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 Tablespoons tomato paste
  • 1/4 teaspoon red pepper flakes
  • 2 Tablespoons fresh parsley, chopped or 2 tsp dried
  • 0.5 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups fresh spinach leaves (optional)

Sauces & Broth

  • 1 recipe homemade marinara sauce or 24 ounce marinara sauce
  • 7 cups low sodium chicken broth or vegetable broth

Pasta & Cheese

  • 9 lasagna noodles, broken into pieces
  • 10 ounces ricotta cheese or cottage cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup freshly grated parmesan cheese
  • Fresh basil for serving

Instructions

  1. Brown the meats: In a large pot over medium-high heat, cook ground beef and Italian sausage until browned, seasoning with salt and freshly ground black pepper as you cook. Once cooked through, drain any excess grease and remove the meat from the pot to set aside.
  2. Sauté vegetables: In the same large pot, heat olive oil over medium heat. Add the chopped yellow onion and sauté for about 5 minutes until softened and translucent. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add tomato paste and seasonings: Stir in the tomato paste, red pepper flakes, fresh or dried parsley, dried oregano, and dried basil. Mix well with the sautéed onions and garlic to combine the flavors.
  4. Combine marinara and broth: Pour in the marinara sauce and chicken or vegetable broth. Return the browned meats to the pot. Bring the soup to a boil over medium-high heat.
  5. Cook noodles and add spinach: Once boiling, add the broken lasagna noodles (broken into quarters) to the soup. Reduce heat to medium-low and cook, stirring occasionally, until the noodles are tender, about 10-12 minutes. If desired, stir in the fresh spinach during the last few minutes of cooking to wilt.
  6. Prepare cheese mixture: In a small bowl, combine the ricotta cheese (or cottage cheese), shredded mozzarella, and freshly grated parmesan. Stir until well mixed.
  7. Serve: Ladle the hot lasagna soup into bowls and dollop a generous scoop of the cheese mixture on top. Garnish with fresh basil leaves and serve immediately.

Notes

  • Feel free to customize the ingredients based on what you have on hand; this soup is versatile and forgiving.
  • For a vegetarian version, substitute the meats with mushrooms or plant-based crumbles and use vegetable broth.
  • The soup thickens as it sits; add more broth or water when reheating if needed.
  • Leftovers keep well refrigerated for 3-4 days and freeze beautifully for up to 3 months.
  • Using fresh herbs can enhance flavor but dried herbs work well too.
