  • 1/2 cup (120ml) vegetable oil or melted butter
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven & Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch cake pan or line it with parchment paper to ensure the cake does not stick.
  2. Mix Dry Ingredients: In a medium mixing bowl, whisk together the all-purpose flour, baking powder, salt, and freshly grated orange zest until evenly combined.
  3. Prepare Wet Ingredients: In a separate large bowl, beat the eggs and granulated sugar vigorously until the mixture becomes light and fluffy. Then add the fresh orange juice, vegetable oil (or melted butter), and vanilla extract, mixing well to combine all wet ingredients.
  4. Combine: Gradually fold the dry ingredient mixture into the wet ingredients, stirring gently until just combined. Be careful not to overmix to maintain a light, airy texture.
  5. Bake: Pour the batter into the prepared cake pan, spreading it evenly. Bake in the preheated oven for 35 to 40 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
  6. Cool & Serve: Allow the cake to cool in the pan for 10 minutes, then transfer it onto a wire rack to cool completely. Optionally, dust the top with powdered sugar or drizzle with a homemade orange glaze before serving.
