Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts

Soup Base

  • 1 can (28 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Pasta

  • 1 cup small pasta (such as orzo or ditalini)

Cheese and Garnish

  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Prepare the Slow Cooker: Place the chicken breasts at the bottom of the crockpot. Add minced garlic, diced tomatoes (with juices), chicken broth, Italian seasoning, salt, and pepper, stirring gently to combine.
  2. Cook the Soup: Cover and slow cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  3. Shred Chicken: Remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken to the crockpot and stir to combine.
  4. Add Pasta: Add the pasta to the crockpot about 30 minutes before serving, stirring well. Continue to cook on high until the pasta is tender.
  5. Finish with Parmesan: Stir in the grated Parmesan cheese until melted and well combined. Taste and adjust seasoning as needed.
  6. Serve Warm: Ladle the soup into bowls and garnish with fresh basil or parsley if desired. Serve hot.

Notes

  • Use gluten-free pasta to make this recipe gluten-free.
  • For a richer flavor, you can sauté the garlic in a little olive oil before adding it to the crockpot.
  • Leftover soup can be refrigerated for up to 3 days. Reheat gently to avoid overcooking the pasta.
  • Adding a splash of heavy cream at the end can make the soup creamier if desired.
  • If you prefer, cook the pasta separately and add just before serving to prevent it from becoming mushy.
