Instructions

  1. Prep the Chicken: Pat the chicken very dry using paper towels—this is critical for achieving crispy skin. In a small bowl, combine kosher salt, baking powder, garlic powder, smoked paprika, black pepper, onion powder, and dried thyme or rosemary. Rub this seasoning mixture all over the chicken pieces thoroughly. Arrange the chicken skin-side up on a wire rack set over a baking sheet, then refrigerate uncovered for at least 30 minutes or up to overnight to dry out the skin.
  2. Roast the Chicken: Preheat your oven to 425°F (220°C). Melt half of the Crock Homestyle™ Dairy Free Salted Butter and drizzle over the chicken pieces. Place the chicken back on the wire rack or parchment-lined baking sheet, skin-side up, and roast for 35 to 45 minutes, depending on the size of the chicken pieces.
