Ingredients

Scale

Batter Ingredients

  • ⅔ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ¾ teaspoons baking powder
  • ½ cup milk or almond milk

Apple Mixture

  • 2 apples, peeled and chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Cinnamon Sugar Mixture

  • ⅓ cup light brown sugar
  • 1 teaspoon ground cinnamon

Glaze

  • ½ cup powdered sugar
  • 1 to 3 tablespoons milk or cream

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper to prevent sticking.
  2. Make Cinnamon Sugar Mix: In a small bowl, combine ⅓ cup light brown sugar and 1 teaspoon ground cinnamon. Set aside for layering later.
  3. Prepare Apples: Toss peeled and chopped apples with 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon in another bowl. Set aside to macerate slightly.
  4. Cream Butter and Sugar: In a medium mixing bowl, cream together ⅔ cup granulated sugar and softened butter until the mixture is smooth and creamy.
  5. Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in 1 ½ teaspoons vanilla extract to enhance the flavor.
  6. Combine Dry Ingredients: In a separate bowl, whisk together 1 ½ cups all-purpose flour and 1 ¾ teaspoons baking powder.
  7. Mix Batter: Alternately add the flour mixture and ½ cup milk to the creamed butter mixture, beginning and ending with the flour. Mix until just combined to avoid overmixing.
  8. Layer Batter and Apple Mixtures: Pour half of the batter into the prepared loaf pan. Layer half of the apple mixture over the batter, then sprinkle half of the cinnamon sugar mixture on top.
  9. Repeat Layers: Repeat with the remaining batter, apples, and cinnamon sugar mixture. Lightly press the apples into the batter and swirl the cinnamon sugar mix into the batter with a knife to distribute.
  10. Bake: Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool: Let the bread cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.
  12. Prepare Glaze: Mix ½ cup powdered sugar with 1 to 3 tablespoons milk or cream until smooth and drizzle over the cooled bread.

Notes

  • Use Granny Smith apples for a tart flavor contrast that balances the sweetness.
  • You can substitute unsalted butter with vegetable oil for a dairy-free option.
  • This bread can be made ahead and stored at room temperature or refrigerated.
  • Mini loaf pans or muffin tins can be used, but adjust baking time accordingly.
  • The bread freezes well for up to 3 months; thaw before serving.
