Ingredients

Scale

Meat and Sauce

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 tablespoons chili powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 2 cups water, divided (2 cups and 2 tablespoons)
  • 2 tablespoons cornstarch
  • 1 (16 ounce) can refried beans
  • 1 (6 ounce) can tomato paste (about 6 tablespoons)

Cheese and Tortillas

  • 3 cups cheddar cheese, shredded
  • 10 (10 inch) flour tortillas

Optional for Serving

  • Sour cream
  • Salsa

Instructions

  1. Cook the Beef and Onions: Heat a large skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is browned and onions are soft. Drain any excess fat before proceeding.
  2. Season the Meat: Stir in chili powder, cayenne pepper, and salt. Mix well to evenly coat the beef and onions with the spices.
  3. Add Water and Thicken: Pour in 2 cups of water. In a small bowl, mix the cornstarch with 2 tablespoons of water to make a slurry. Stir this mixture into the skillet and let it come to a simmer so the sauce thickens.
  4. Add Beans and Tomato Paste: Stir in the refried beans and tomato paste until everything is well combined and heated through.
  5. Melt the Cheese: Add 1 1/2 cups of shredded cheddar cheese to the meat mixture, stirring until melted and evenly mixed.
  6. Assemble the Burritos: Warm the flour tortillas in the microwave for about 15 seconds to soften. Place a tortilla on a cutting board, sprinkle a pinch of shredded cheese on it, then spoon 1/4 to 1/2 cup of the meat mixture onto the center.
  7. Roll the Burrito: Fold in the sides of the tortilla and then roll it over into a secure log shape.
  8. Serve: Serve your chili cheese burritos hot with sour cream and salsa if desired. Enjoy!

Notes

  • You can substitute cheddar cheese with mozzarella, pepper jack, or a Mexican cheese blend for variety.
  • Feel free to add chopped bell peppers or jalapeno peppers to the meat mixture for extra flavor and spice.
  • To freeze, let burritos cool completely, wrap individually in plastic wrap, and place in a large ziplock freezer bag. Freeze for up to 3 months. Reheat before serving.
