Ingredients

Scale

For the Bread:

  • 23 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

For the Cinnamon Swirl:

  • 1/3 cup sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper to prevent sticking.
  2. Prepare Cinnamon Swirl Mixture: In a small bowl, combine 1/3 cup sugar and 1 tablespoon ground cinnamon. Set this mixture aside for later layering.
  3. Prepare Banana Bread Batter: In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter to combine evenly. Add baking soda and a pinch of salt to the mixture. Stir in the sugar, beaten egg, and vanilla extract thoroughly. Gradually add the all-purpose flour, stirring until just combined without overmixing to keep the bread tender.
  4. Layer the Batter and Swirl Mixture: Pour half of the banana bread batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter. Pour the remaining batter on top, then sprinkle the rest of the cinnamon sugar mixture on the surface. Using a knife or skewer, gently swirl the cinnamon sugar through the batter to create a marbled effect.
  5. Bake: Place the loaf pan in the preheated oven and bake for 50-60 minutes. Test for doneness by inserting a toothpick into the center of the loaf; it should come out clean or with a few moist crumbs. Avoid overbaking to keep the bread moist.
  6. Cool and Serve: Remove the banana bread from the oven and let it cool in the pan for about 10 minutes. Transfer to a wire rack to cool completely before slicing. Serve as a delicious breakfast, brunch, or anytime snack.

Notes

  • You can add 1/2 cup of chopped nuts like walnuts or pecans, or chocolate chips to the batter for extra flavor and texture.
  • If using frozen bananas, thaw completely and adjust flour slightly to compensate for extra moisture.
  • Butter can be substituted with an equal amount of vegetable oil or melted coconut oil, though this may slightly affect flavor and texture.
  • Store leftover banana bread in an airtight container at room temperature for 2-3 days or refrigerate for up to a week. It can also be frozen for 2-3 months when wrapped tightly.
  • To make gluten-free, use a gluten-free all-purpose flour blend and ensure all other ingredients are gluten-free.
