Ingredients

Scale

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ tsp ground cinnamon
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp instant coffee granules

Wet Ingredients

  • 1 tsp vanilla extract
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 1 large egg

Coating Sugars

  • ¼ cup granulated sugar (for rolling)
  • ¼ cup powdered sugar (for rolling)

Instructions

  1. Mix the Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, ground cinnamon, baking powder, and salt. Set aside for later.
  2. Dissolve the Coffee: In a small bowl, combine the instant coffee granules with the vanilla extract until fully dissolved, creating a flavorful coffee mixture.
  3. Cream the Butter & Sugar: In a large bowl, beat the melted unsalted butter and brown sugar together until smooth and creamy. Then, mix in the egg followed by the coffee mixture until fully incorporated.
  4. Combine Wet & Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. The resulting dough will be soft and slightly sticky.
  5. Chill the Dough: Cover the dough and refrigerate for 30 minutes to help it firm up, making it easier to handle and enhancing the crinkle effect during baking.
  6. Roll & Coat the Dough: Scoop the chilled dough into small balls. Roll each ball first in granulated sugar, then in powdered sugar to create the signature crinkled coating.
  7. Bake the Cookies: Place the coated dough balls on a parchment-lined baking sheet, ensuring they are spaced apart. Bake in a preheated oven at 350°F (175°C) for 10–12 minutes, until the cookies are crinkled and set.
  8. Cool & Enjoy: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. Serve warm or at room temperature for the best flavor and texture.

Notes

  • Chill the dough to achieve better crinkles and easier rolling.
  • Do not overmix the dough to keep cookies soft and chewy.
  • For more pronounced crinkles, roll dough balls in granulated sugar first, then powdered sugar.
  • Use good-quality, fresh instant coffee granules for optimal flavor.
  • Space cookies adequately on the baking sheet, as they will spread while baking.
  • Substitute espresso powder or finely ground coffee if instant coffee is unavailable.
  • Add a pinch of nutmeg or cardamom to spike the flavor for a spicier twist.
  • Mix in mini chocolate chips for a mocha chocolate variation.
  • For a dairy-free option, use coconut oil instead of butter.
  • Dough can be chilled up to 24 hours or frozen in balls for up to 3 months before baking.
  • Store baked cookies in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
