Ingredients

Scale

For the Bread:

  • 1¾ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup vegetable oil or melted butter
  • 2 large eggs
  • ¼ cup milk
  • 1½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

For the Apples:

  • 2 medium apples (Granny Smith or Honeycrisp work well)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

For the Topping:

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Prep your pan and oven: Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or cooking spray to ensure the bread doesn’t stick.
  2. Prepare the apples: Peel and dice the apples into small ½-inch pieces. Toss them with 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon until evenly coated. Set aside to allow the flavors to meld.
  3. Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt to evenly distribute the leavening and spices.
  4. Mix wet ingredients: In a large bowl, beat together 1 cup sugar, vegetable oil (or melted butter), eggs, milk, and vanilla extract until well combined and smooth.
  5. Combine: Gradually add the dry ingredient mixture to the wet ingredients and stir gently until just combined. Avoid overmixing as a few lumps are fine and help keep the bread tender.
  6. Fold in apples: Gently fold the cinnamon-sugar coated apple pieces into the batter, ensuring even distribution without bruising the fruit.
  7. Pour and top: Pour the batter into the prepared loaf pan, smoothing the surface. Mix the topping ingredients (2 tablespoons sugar and 1 teaspoon cinnamon) and sprinkle evenly over the batter.
  8. Bake: Place the loaf pan in the oven and bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.
  9. Cool: Allow the bread to cool in the pan for 10 minutes. Then remove the bread from the pan and transfer to a wire rack to cool completely before slicing to achieve clean cuts.

Notes

  • Don’t overmix the batter to keep the bread tender and light.
  • Use room temperature ingredients for better mixing and texture.
  • Test for doneness with a toothpick – it should come out clean or with just a few moist crumbs.
  • Let the bread cool completely before slicing for neat, clean slices.
  • Store covered at room temperature for up to 3 days, or freeze for up to 3 months for longer storage.
  • Customization Ideas: Add ½ cup chopped walnuts or pecans for crunch; incorporate ¼ teaspoon nutmeg or allspice for extra spice; drizzle with a powdered sugar glaze for sweetness; try brown butter instead of oil for a richer flavor.
