These Cherry Pineapple Popsicles are a refreshing summer treat made from fresh or frozen cherries and pineapple chunks blended with pineapple juice and lightly sweetened with homemade simple syrup.   • 3 cups cherries, pitted (fresh or frozen)
  • 1/3 cup pineapple juice
  • 1/2 cup pineapple juice
  • 3 tablespoons simple syrup (divided as 1 Tbsp and 2 Tbsp)

Simple Syrup

  • 1 cup water
  • 1 cup granulated sugar

Instructions

  1. Prepare Pineapple Puree: In a blender, combine 2 cups of pineapple chunks with 1/3 cup of pineapple juice. Blend until smooth. Taste the puree and sweeten with 1 tablespoon of simple syrup if needed. Transfer the pineapple puree into a liquid measuring cup with a spout and set aside.
  2. Prepare Cherry Puree: Rinse out the blender to clean any pineapple residue. Puree 3 cups of pitted cherries with the remaining 1/2 cup of pineapple juice until smooth. Taste and sweeten with 2 tablespoons of simple syrup, if necessary. Transfer the cherry puree into another liquid measuring cup with a spout.
  3. Assemble Popsicles: Pour the cherry puree into the popsicle molds, filling them halfway. Then slowly pour in the pineapple puree on top of the cherry layer to fill the molds.
  4. Insert Sticks and Freeze: Cover the popsicle molds and insert wooden sticks into each mold. Freeze for 4 to 5 hours or until the popsicles are completely firm.
  5. Remove Popsicles: To remove the popsicles from the mold, submerge the molds in room temperature water for 60 to 90 seconds. This loosens them safely without melting. Gently pull the popsicles out of their molds.
  6. Make Simple Syrup: In a small saucepan, combine 1 cup of water and 1 cup of granulated sugar. Bring the mixture to a boil and stir until the sugar has fully dissolved. Remove from heat and allow the syrup to cool to room temperature. Store the simple syrup in the fridge until ready to use for sweetening the fruit purees.

  • You can use fresh or frozen cherries; just make sure to pit them before blending.
  • If you prefer less sweetness, adjust the amount of simple syrup accordingly.
  • For quicker popsicle removal, briefly run the mold under warm water but avoid submerging the wooden sticks.
