Ingredients

Scale

Dry Ingredients

  • 225g all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt

Wet Ingredients

  • 50g cold unsalted butter, cubed
  • 150g mature cheddar cheese, grated
  • 150ml whole milk

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, and salt to ensure an even distribution of leavening agents.
  2. Add Butter: Rub the cold cubed butter into the flour mixture using your fingertips until the mixture resembles fine breadcrumbs.
  3. Add Cheese: Stir in the grated mature cheddar cheese evenly throughout the flour and butter mixture.
  4. Form the Dough: Gradually add the milk while stirring to bring the dough together into a soft but firm consistency, being careful not to overmix.
  5. Shape the Scones: Lightly flour your work surface, turn the dough out, and gently knead just until smooth. Roll out the dough to about 2 cm (¾ inch) thickness and cut into rounds using a floured cutter.
  6. Bake: Preheat the oven to 220°C (425°F). Place the scones on a baking tray lined with parchment paper. Bake for 12-15 minutes or until the scones have risen and turned a beautiful golden brown.
  7. Cool and Serve: Remove the scones from the oven and cool slightly on a wire rack before serving warm with butter or your choice of accompaniments.

Notes

  • Use mature cheddar for a stronger cheese flavor.
  • Work quickly to keep the butter cold for a flaky texture.
  • Do not overwork the dough to avoid tough scones.
  • Serve warm for best taste and texture.
  • Optional: Add a pinch of mustard powder or herbs for extra flavor.
