Beef Mixture

  • ½ pound lean ground beef
  • ½ cup diced yellow onion

  • ¼ cup water
  • 2 tablespoons taco seasoning

  • 8 ounces Colby jack cheese, shredded
  • 12 ounces bag of tortilla chips (Tostitos brand – use about of the bag)

Instructions

  1. Preheat and Prep: Preheat your oven to 450°F (232°C). Spray a 12-cup capacity bundt pan thoroughly with cooking spray to prevent sticking and set aside.
  2. Cook the Beef Mixture: In a large skillet over medium-high heat, cook ground beef, diced onion, salt, and black pepper together for 6–7 minutes, stirring occasionally until the beef is fully browned and no pink remains. Drain any excess fat.
  3. Season the Beef: Return the skillet to medium heat; stir in ¼ cup of water and 2 tablespoons of taco seasoning. Cook for an additional 2–3 minutes until the liquid mostly evaporates, allowing the flavors to meld. Remove from heat.
  4. Layer Ingredients in Bundt Pan: Into the prepared bundt pan, layer half of the shredded Colby jack cheese evenly on the bottom. Add half of the cooked beef mixture on top of the cheese. Then, scatter about one-third of the tortilla chips evenly over the beef, being careful not to pack them down.
  5. Add Final Layers: Repeat by adding the remaining cheese, then the rest of the beef mixture, and another one-third of the tortilla chips on top to form the final layer. Avoid overfilling; ensure the layers are even but not compressed.
  6. Bake: Place the bundt pan in the oven and bake for 10 minutes, until the cheese is melted and the nachos are heated through.
  7. Invert and Serve: Remove the bundt pan from the oven. Using a large, heatproof plate, place it on top of the bundt pan, then carefully invert the pan so the nachos transfer onto the plate. Gently remove the bundt pan. If any cheese sticks to the pan, replace it on the nachos.
  8. Add Garnishes and Serve Warm: Top with optional garnishes such as sour cream, diced tomatoes, and chopped cilantro as desired. Serve immediately to enjoy the perfect crunchy, cheesy layers.
