Burger Patties:
- 1 lb ground chicken
- 1 egg
- 1/2 cup almond flour
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 cup celery, finely sliced
- 1 tablespoon buffalo sauce, homemade or store-bought
- 1 tablespoon ghee, cold and cut into little chunks
Serving Suggestions:
- Butter lettuce
- Bun of choice: lettuce bun, gluten-free bun, or regular bun
- Optional toppings: sliced green onions, additional buffalo sauce, ranch dressing, blue cheese dressing, and/or blue cheese crumbles
- Make Burgers: Put all burger ingredients in a mixing bowl and mix thoroughly to combine. Separate the mixture into 4 equal portions, optionally oiling your hands to prevent sticking, then shape each into burger patties.
- Refrigerate (optional): Place the patties on a plate, cover, and refrigerate for 30-60 minutes to firm up. This helps them hold together better when grilling but is not mandatory.
- Prep Grill: Preheat the grill to 400-450°F (204-232°C). Cover the grill grates with aluminum foil and spray generously with non-stick or avocado oil spray to prevent sticking.
- Cook Patties: Place the burger patties on the foil over direct heat. Cook for 5-7 minutes on each side with the grill covered, until internal temperature reaches 160-165°F (71-74°C). Use a meat thermometer to ensure doneness.
- Rest & Serve: Remove the cooked patties from the grill and let them rest for 5-10 minutes. Build your burgers with your choice of buns or lettuce wraps and add any desired toppings or sauces before serving.
Notes
- Refrigerating the patties before cooking improves structural integrity but can be skipped in a hurry.
- Make sure the internal temperature reaches at least 160°F for food safety when cooking ground chicken.
- Using aluminum foil on grill grates prevents sticking and helps with easy cleanup.
- Adjust the amount of buffalo sauce in the patties according to your preferred spice level.
- Serve with low-carb options like butter lettuce for a gluten-free or low-carb meal.
