Ingredients

Scale

Main Ingredients

  • 12 graham crackers, broken in half
  • 1 1/2 cups creamy peanut butter
  • 1/2 cup (1 stick) butter, softened
  • 2 1/2 cups powdered sugar
  • 1 tsp vanilla extract

Chocolate Coating

  • 3 1/2 cups semi-sweet chocolate chips
  • 3 tbsp vegetable oil, divided

Peanut Butter Drizzle

  • 1 cup peanut butter chips
  • 1 tbsp vegetable oil

Instructions

  1. Prepare Graham Crackers: Break each graham cracker sheet in half to create squares. Place the graham crackers on a lined baking sheet and set aside to prepare for assembly.
  2. Make Peanut Butter Filling: In a large mixing bowl, combine the creamy peanut butter, softened butter, powdered sugar, and vanilla extract. Mix thoroughly until the mixture is smooth and well blended.
  3. Form Peanut Butter Balls: Roll the peanut butter mixture into 1-inch sized balls. Place one ball on top of each graham cracker square.
  4. Flatten Peanut Butter: Carefully press and spread the peanut butter balls onto the surface of each graham cracker, extending the filling all the way to the edges for uniform coverage.
  5. Melt Chocolate Coating: In a microwave-safe bowl, combine semi-sweet chocolate chips and 3 tablespoons of vegetable oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
  6. Coat Graham Crackers: Dip each peanut butter topped graham cracker into the melted chocolate, coating thoroughly. Allow excess chocolate to drip off, then place back onto the lined baking sheet.
  7. Prepare Peanut Butter Drizzle: In a separate microwave-safe bowl, combine peanut butter chips with 1 tablespoon of vegetable oil. Microwave in 30-second intervals, stirring until melted and smooth.
  8. Drizzle and Chill: Drizzle the melted peanut butter chips over the chocolate coated graham crackers using a spoon or piping method. Transfer the baking sheet to the refrigerator and chill until the chocolate sets completely. Enjoy once firm.

Notes

  • You can substitute vegetable oil with refined coconut oil or canola oil for a healthier alternative.
  • The vanilla extract is mixed into the peanut butter filling for enhanced flavor.
  • If peanut butter chips aren’t available, try drizzling caramel or additional melted chocolate over the top as an alternative.
  • Store the finished Buckeye Graham Crackers in the refrigerator to keep the chocolate firm.
  • These treats are easy to make ahead and perfect for parties or snacks.
