Instructions

  1. Cook the bacon: Heat the grill to high. Arrange the bacon rashers on a baking tray lined with foil and grill for 5-7 minutes until crisp. Once cooked, turn off the grill and leave the tray inside to keep the bacon warm.
  2. Prepare pancake batter: In a large bowl, mix self-raising flour, baking powder, golden caster sugar, and a pinch of salt. Make a well in the center and add lightly beaten eggs, melted butter, and milk. Whisk with a balloon whisk or electric hand whisk until the batter is smooth and pourable, then transfer to a jug for easier pouring.
  3. Cook the pancakes: Heat a small knob of butter and 1 tsp vegetable oil in a large non-stick frying pan over medium heat. When the butter froths, pour in batter rounds about 8cm wide, spacing them apart to allow spreading during cooking. Cook for 1-2 minutes until tiny bubbles appear and the surface begins to set and dry. Flip the pancakes and cook for another minute. Transfer cooked pancakes to the oven with the bacon to keep warm. Repeat with remaining batter.

Assemble the sharing board: Arrange the cooked pancakes and bacon on a serving board along with bowls or sections of toppings such as maple syrup, raspberries, sliced banana, berry compote, chocolate spread, blueberries, and mini marshmallows.
