  • 12 oz. fusilli corti bucati or other short pasta
  • 1 (12-oz.) can evaporated milk (1½ cups)
  • 2 (5.3-oz.) packages Garlic & Herb Boursin cheese

Instructions

  1. Cook the pasta. In a large pot of boiling salted water, add the fusilli pasta and cook, stirring occasionally, until al dente according to the package directions. Reserve ½ cup of the pasta cooking water before draining the pasta.
  2. Prepare the Boursin sauce. While the pasta cooks, heat a large saucepan over medium-low heat and bring the evaporated milk to a gentle simmer. Add the Garlic & Herb Boursin cheese and cook, stirring continuously, until the cheese has melted completely and the mixture is well combined, about 3 minutes.
  3. Thicken and season the sauce. Continue to simmer the cheese sauce, stirring occasionally, until it slightly thickens and develops a glossy texture, about 2 to 3 minutes. Season the sauce with ½ teaspoon of kosher salt, adjusting to taste later as needed.
  4. Combine pasta and sauce. Add the drained pasta back into the saucepan with the Boursin cheese sauce, including a splash of the reserved pasta water. Gently stir the pasta over medium-low heat, adding more pasta water as necessary to loosen the sauce, until the pasta is fully coated and creamy.
  5. Final seasoning and serve. Taste and add additional kosher salt if needed. Serve the Boursin Mac Cheese immediately for the best creamy texture and flavor.
