For the Toast
- 2 slices sourdough bread
- 1 tablespoon butter (divided)
For the Topping
- 2 eggs
- 2 tablespoons Garlic & Herb Boursin cheese
- ½ cup arugula
- ¼ cup cherry tomatoes (quartered)
- Drizzle of balsamic glaze
- Salt and pepper to taste
- Prepare the Skillet: Heat a skillet over medium to medium-high heat. Add ½ tablespoon of butter and spread it around the skillet until fully melted to prevent sticking and help toast the bread evenly.
- Toast the Bread: Place the sourdough slices in the skillet and toast for 2-3 minutes on one side until golden and crispy. Flip the slices and toast the other side for 1-2 minutes. Once toasted to your preference, remove the bread from the skillet and set aside.
- Cook the Eggs: Reduce the heat to low and add the remaining ½ tablespoon of butter to the skillet. Crack the eggs into the skillet and cook them to your desired doneness—whether sunny-side up, over-easy, or fully cooked. This low heat ensures gentle cooking without burning the butter.
