Ingredients

Scale

Protein

  • 1 lb organic pasture-raised chicken breast, cut into 1-inch cubes

Produce

  • 1 fresh ripe pineapple, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces

Condiments & Oils

  • ¼ cup Primal Kitchen Mango Jalapeño BBQ Sauce (or your favorite BBQ sauce)
  • 2 tbsp additional BBQ Sauce for basting
  • 1 tbsp avocado oil, plus more for drizzling and brushing the grill

Spices & Seasoning

  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Chicken: Cut the chicken breasts into 1-inch cubes and place them in a medium bowl. Season with sea salt and freshly ground black pepper, then add ¼ cup of BBQ sauce. Use your hands to thoroughly combine and coat the chicken evenly. Let it marinate for up to 30 minutes in the refrigerator to absorb the flavors.
  2. Prepare the Vegetables and Pineapple: Cut the fresh pineapple and red bell pepper into 1-inch pieces. Drizzle them lightly with avocado oil and sprinkle with salt and pepper. Toss gently and set aside to add flavor and prevent sticking to the grill.
  3. Preheat the Grill: Heat your grill or grill pan to medium-high heat. Brush the grill grates with a little avocado oil to prevent the kabobs from sticking.
  4. Assemble the Kabobs: Thread the skewers by alternating pieces of chicken, pineapple, and bell pepper. Follow the pattern: 1 chicken piece, 1 pineapple piece, 1 bell pepper piece, repeating until the skewer is full. Leave a small gap between each piece for even cooking.
  5. Grill the Kabobs: Place the assembled kabobs on the preheated grill. Cook for 5-7 minutes on each side, turning carefully to prevent burning, until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C). While grilling, baste the kabobs frequently with the remaining 2 tbsp of BBQ sauce to keep them moist and flavorful.
  6. Serve: Once cooked, remove the kabobs from the grill and let them rest for a few minutes. Serve with your favorite sides such as rice, potato salad, or fresh garden salad, and optionally with dipping sauces like ranch or lemon dill sauce.

Notes

  • If using wooden skewers, soak them in water for at least 10 minutes before grilling to prevent burning.
  • You can substitute chicken breasts with boneless, skinless chicken thighs for a juicier kabob.
  • Feel free to add other vegetables like zucchini, red onion, or mushrooms for variety.
  • For homemade BBQ sauce, try combining BBQ sauce with pineapple juice, lime juice, soy sauce, fresh ginger, or garlic to add extra depth.
  • To store leftovers, remove ingredients from the skewers and keep in an airtight container in the refrigerator for up to 3 days.
  • Reheat kabobs in a 275°F oven for 5-10 minutes or on the grill over low heat until warmed through.
  • Cut all ingredients to roughly the same size and leave small spaces on skewers to ensure even cooking.
