Ingredients

Scale

Potatoes

  • 34 large russet potatoes

Seasoning & Coating

  • 1/4 cup extra virgin olive oil
  • 1 tbsp garlic powder
  • 1 tbsp Italian seasoning
  • 1 tsp salt (or to taste)
  • 1/4 tsp freshly ground black pepper (or to taste)
  • 1/2 cup freshly grated Parmesan cheese

Garnish

  • Chopped fresh parsley

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it is hot and ready for baking the potato wedges.
  2. Cut Potatoes: Wash and dry 3-4 large russet potatoes. Cut each potato lengthwise in half, then cut each half into three wedge-shaped pieces.
  3. Prepare Coating: In a large mixing bowl, combine the potato wedges with 1/4 cup extra virgin olive oil, 1 tablespoon garlic powder, 1 tablespoon Italian seasoning, 1/2 cup freshly grated Parmesan cheese, 1 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Toss well to evenly coat all wedges.
  4. Arrange for Baking: Lightly coat a 15x10x1-inch baking pan with cooking spray. Arrange the coated potato wedges skin side down in a single layer on the pan. Sprinkle any remaining seasoning mixture evenly over the wedges.
  5. Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the wedges are golden brown and crispy on the outside.
  6. Garnish and Serve: Remove the wedges from the oven and transfer to a serving plate. Garnish with chopped fresh parsley. Serve warm with your favorite dipping sauce such as ketchup or ranch.

Notes

  • For crispier wedges, soak potato slices in cold water for 30 minutes before seasoning and baking; pat dry thoroughly.
  • You can substitute Parmesan with Pecorino Romano for a sharper flavor.
  • Adjust salt and seasoning quantities to taste.
  • Use a convection setting on your oven if available to enhance crispiness.
  • Serve immediately for best texture, as wedges may become softer if left to sit.
